Canadian legal hooch.

Take your apple harvest and convert it to cider.
Place cider into barrels and bury them just before winter sets in.
In the spring and as soon as you can get a pick axe into the ground, dig up your barrels and drain the liquid into bottles.
Because in the rigours of a Canadian winter, the mix will start to freeze and the water freezes out preferentially to the alcohol. In the spring the liquid will be alcohol enriched; the water remaining in the solid ice
